Menu Monday (#5)

It's been two weeks since I shared my last menu.  So I'm back again with another 2 week menu plan, which takes us into March. How can that be?  

Week One

Monday
Spicy beans and corn bread.   


Tuesday
Brinner - sourdough waffles and omelets.

Wednesday
Salsa Chicken over rice. I basically just pour my favorite salsa over some chicken in the crock-pot and then cook it on low for several hours and stir in 1/2 a block of cream cheese before serving.  Serve it over rice with cheese and any taco like toppings.  I'll share an official recipe soon.

Thursday 
Chicken Bacon Noodle Bake in a Creamy Garlic Herb and Lemon Sauce.....I was going for a Dr. Suess like title. Have you read Fox in Sox? Try to say that 4 times fast.  :) This is a new creation we just made up - so I'll share it soon. I didn't snag a picture last time becasue it was gone too fast. :) 

Friday
Bean enchiladas with the leftover spicy beans from Monday. 

Saturday
Grilled Chicken Salad - I haven't shared one of my favorite marinades, but this one is really good.  I just marinade the chicken, grill it and the serve it over a green salad with a vinaigrette and lots of yummy toppings like: avocado, bacon bits, croutons, cucumbers, cranberries, toasted pecans, and some kind of yummy cheese (Parmesan, feta, or bleu cheese)etc. 

Sunday
A new pinwheel creation - I'm not sure yet, but I've been brainstorming. 

Week 2 

Monday
Beef and Cheese Wedges

Tuesday
Potato Puffers, fruit salad, scrambled eggs.

Wednesday
Mushroom Bisque and artisan bread- I've been collaborating with my aunt and sister in-law for the perfect recipe for this soup....so this is another test.  I'll share when we nail it down. 

Thursday
Taco Salad - another thing repeated often over here. We loooove this stuff.  Especially with some fresh salsa.

Friday
Date night - going out! :) 

Saturday
Beef Taquitos or Breakfast Taquitos. We have some form of taquitos a lot too, cause my kids gobble them up!

Menu Monday {#4}

It's "Menu Monday" again! Are you liking this new tradition? Please tell us!  

Also, stay tuned this week. We'll be having our FIRST EVER GIVEAWAY! And we're super excited!

We had a great week last week celebrating my husband's 30th and eating too much dessert and yummy food all week, I kind of feel like fasting for a week just to not have to cook, clean up etc. But I really wouldn't do that. Most of my thoughts throughout the day are about food. You know, what for breakfast, then lunch and then dinner.  And a few snacks. I get out of routine when company comes and don't work out, so this week it's back to the grind. I'm going to be sharing my 2 week menu (which is what I generally plan - but somehow I got out of whack).  

Hope you'll enjoy the ideas. And I'll share my menu again in two weeks.

Menu Monday {# 3}


It's Monday again, which means I'm sharing round 3 of my menu for the year.  This week is my husband's birthday and we have his parents visiting us from out of town.  So we're eating lots of favorites this week.  We have gluten and soy allergies to avoid with our company this week, so you should find some good ideas for meals if you are trying to avoid the same things.

Menu Monday {#2}

Hello, friends! 

It's time for round 2 of Menu Monday.  Last week I told you about why I like to plan menu's etc.  I've been in a slump about planning a 2 week menu lately.  But I'll be back at that soon - and then I'll share two weeks in each post.  So you'll get menu ideas twice a month.  Next week we have company coming and they have some allergies, so we might be mixing up our menu a bit to avoid gluten and soy. So stay tuned for some allergen-free recipes.

Monday
Out with friends

Tuesday
Chicken Alfredo over pasta with Salad and breadsticks. I use the alfredo sauce that I linked in and grill some chicken and put it all over linguine pasta. 

Wednesday 
Chicken Burritos (Whitney's recipe - she's our sister in law). I'll share her recipe soon, after I get her permission. :) My husband claims he could eat a burrito every day and never get sick of them.  So he gets really excited when burritos are on the menu.  

Thursday
Fried Rice - I have a recipe I'll share soon. 

Friday
Breakfast (aka Brinner)

Saturday
Brazilian Night - we've been planning this with some friends since November - so we're really looking forward to it.  One of my friends is from Brazil and the other lived there for 2 years serving a mission for the LDS church.  We looove the Brazilian food we've had.  I have a recipe for Feijoada on the blog - we loooove it.

Sunday
Leftovers/Whatever is in the fridge that needs to be used up.

Menu Monday

I am a huge menu planner.  I love having one for several reasons:
a) I plan to try new things
b) I can start thinking about dinner before 5:00pm. Between 4:30 and 5 is when my kids are begging for snacks - right as I'm starting to make dinner or deciding what to do (one of my pet peeves). :)
c) I can shop for the things I need and minimize the number of times I go to the grocery store, which saves me money.  If I go to the store more than once a week I spend so much more money and end up buying things I don't really need.  
d) I seem to plan more vegetables and things to go with the meal when it's something I have thought about.
e) We eat dinner between 5 and 6 - when I have a plan.  Otherwise it's much later - and life gets frantic for me if I don't have that.
