Apple Slice Doughnut Snack

Fall time brings a lot of treats, sweets and goodies! I know I'm always left looking for something nutritious and healthy - and this little "treat" was just fun and cute, so my kids thought it really was a treat - but it was more of a healthy snack. So I called it a win-win!  We call these Apple Slice Doughnuts!

No promises that they taste like an actual doughnut, but we like to call these doughnuts anyway.  The kids love being able to customize their own.  We like to switch it up and use different nut butters as well--or even nutella or cookie butter if it's for dessert.  

These work great for a mid-day pick-me-up or an after-school snack!


It's more of an idea than a recipe, but here is an actual recipe if you feel you need it ;)

Apple Slice Doughnut Snack

Ingredients:


1 apple, cored and sliced into rounds
Nut butter for spreading
Toppings: Chocolate chips, cinnamon chips, sprinkles, shredded coconut, raisins, chopped nuts, poppy seeds, or anything else you love!

Directions:


Spread apple slices with nut butter and top as desired. You can also put your nut butter in a plastic ziplock bag and snip the end to squirt it on the apple. It's sometimes tricky to spread a sticky butter on a juicy apple! :)  Serve immediately.

Pizza Dippers



We love having pizza night a few times a month. These were a fun way to mix things up - and were super easy to make with Rhodes Warm-N-Serve rolls.  Those have been a life saver on nights when it's hard to find time to make anything.  I like keeping a bag or two in the freezer just for that.

Fruit & Nut Trail Mix with Dark Chocolate


Are you ever in need of a pick me up snack?  I know I am.  I often get to this point in the afternoon when I'm hangry (hungry + angry).  And as a mom of 3 sometimes it's hard to get a good snack in during a busy day or diapers, stories, and breastfeeding, school drop off/pick up, etc, etc.  This trail mix has been my saving grace the last few weeks. I've had moments when the baby needs to eat and so do I.  This is the perfect snack to hold me over until I get a chance to eat.  My husband has also been enjoying it at work in the afternoon when his lunch is starting to wear off and it's not time to come home yet.  


And with school starting over the last 2 weeks it's been a great snack for my daughter that seems to hardly have any time to eat lunch at school. Does anyone else have kids that don't have enough time to eat?  I mean, I know my daughter is a socializer, but I think the need a few more minutes to be able to eat without snarfing. 

I grabbed a little cup of this trail mix to bring her when she got off the bus and she was really excited to munch on it as we chatted about her day on the walk home.  She hadn't ever had macadamia nuts and asked me what they were.  She liked them a lot - and I'd have to say I did too! It was a great little snack to tide her over until dinner was ready!   

We seriously have loved the flavor combo in this mix!!!! Like a lot! My husband and I have been talking about it all week!  It has the perfect amount of sweet to nut ratio with just a little salt (you can add more depending on which nuts you choose to be salted vs not).  And the bits of dark chocolate seriously take this over the top! I hope you enjoy this as much as we do.  

This mix consists of: pistachios, dark chocolate covered pumpkin seeds (found the bulk section of Sprout's Farmers Market - any dark chocolate chunk will do though), dried cranberries, dried mango chunks (I like to buy the unsweetened organic mango strips and then I cut them into chunks with kitchen shears. I really despise the preservative flavor on some dried fruit - so I always check the label to make sure it's just the fruit (sometimes only sugar added, but I prefer nothing)), macadamia nuts, raisins, cashews and pecans.

Fruit & Nut Trail Mix with Dark Chocolate

Yield: 2 quarts 
Notes:

I am not a huge salt fan, but I like a little sweet and salty mix. Feel free to choose how much salt you want in your mix by choosing salted or unsalted nuts.  I only had salted pistachios and I thought it was great - although I might choose one more salted nut next time.  
Ingredients:

1 cup pistachio nuts, shelled (salted or unsalted)
1 cup macadamia nuts (salted or unsalted)
1 cup cashews (salted or unsalted)
1 cup pecans (salted or unsalted)
1 cup dried mango, cut into bite size chunks
1 cup dark chocolate covered pumpkin seeds (pepitas), or other dark chocolate chunks
1 cup dried cranberries
1 cup raisins
Directions:

Mix the above ingredients in a medium size mixing bowl, stir to combine. Store in a cool dry place in 2 quart jars or a gallon size zip lock back.  It makes about 2 quarts of mix.  Scoop out ¼ cup or so for a serving. Enjoy!

Sprinkledoodles {on a stick}

How fun would these rainbow sprinkle cookies be for St. Patty's Day?  Cookies on a stick are a fun tradition in our family and the kids go crazy for them.  Especially this colorful version!  Really they can be adapted to any holiday/season by changing up your sprinkles.  They are perfect for parties or gifting.  They package up nicely and transport easily.  Our mom used to bring them to school on our birthdays.  They are happiness on a stick.


These cookies can be summed up in 6 simple steps:
1) Start with a snickerdoodle cookie dough base.  2) Roll in your favorite sprinkles.  3) Insert popsicle sticks and flatten slightly.  5) Bake until they begin to set up.  6) Be the coolest mom/neighbor/friend ever!






Quick tip on the sprinkles:  you can often ask for seasonal sprinkles at your local bakery and they will sell any amount you need to you in a little tub super inexpensively!  We have tried this successfully at both Smith's/Kroger and Wal-mart.

Sprinkledoodles {on a stick}

Ingredients:

1 cup butter, softened
3/4 cup white sugar
3/4 cup brown sugar
2 eggs
2 ¾ cups + 2 tablespoons all-purpose flour
2 teaspoons cream of tartar
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Sprinkles
Popsicle sticks

Directions:

Cream butter and sugars. Add eggs and mix until well combined. Add flour, cream of tartar, baking soda, baking powder, and salt.

Refrigerate dough for 30 minutes.

Preheat oven to 350. Roll into balls (about golf ball sized). Roll each ball in sprinkles. Insert popsicle sticks about halfway into cookie dough balls. Place on a lined baking sheet. Gently press each cookie with a glass or other flat surface.

Bake until edges begin to set up, about 8-10 minutes.

Notes:

I safely can bake 6 cookies per sheet (11x17 pan) - golf ball size is much bigger than most cookies I do. And since you don’t want the cookies running into the other popsicle sticks as they spread and bake is a good reason to bake fewer per sheet. Arrange the sticks and cookies so they don’t spread into each other.

Yummy Mummy Pretzel Dogs

We are half way through the month of October already and if you're like me, you might already be thinking of something spooky to serve for dinner on Halloween.  We have a long-standing tradition in our family of eating something fun and festive on Halloween night and these little guys will be making another appearance on our menu this year.    

These mummy dogs, a festive twist on these oh-so-delicious pretzel dogs, are sure to please both young and old this season.  The kids love to help with them, which is always a plus...unless you don't like sweeping flour off your kitchen floor.  ;)

Coconut Cinnamon Popcorn


Hey friends! Today I am sharing a new favorite snack of mine. My kids, my husband and some of my extended family that I've made it for love it too.  It's a keeper. Coconut Cinnamon Popcorn! The name alone is worth drooling over.  

I was introduced to this popcorn a few months ago by one of my friends who brought it to our ladies bunco night.  Anyone else out there play bunco?  It's a simple dice game that we play and we bring random gifts from our house or whatever for prizes. It's a fun reason to get together and chat. I am way more into the chatting and snacking then the game itself, but I enjoy it all.  When I tasted the popcorn that night I had to know what was in it.  My friend, Lacey, said it was just popped popcorn drizzled with coconut oil and sprinkled with cinnamon sugar.  After hearing that there was no wonder why I loved it so much.  


Since then we've made this more times than I can count on two hands.  So I've tweaked it and perfected it just the way I like it.   And I even served it at a baby shower a week and a half ago, where I put a little banner saying, "ready to pop" above the bowl. It was a hit at the shower too. That night I drizzled it with melted white chocolate too, just to add an extra hint of yumminess, but it totally doesn't need it. 
 


If you are looking for a treat to share and don't want to add much sugar into the mix, this is just for you. It perfectly satisfies my sweet craving without me feeling like I have dove into something totally sinful!



Coconut Cinnamon Popcorn

[Serves 4-5  - make in 5 minutes]
Ingredients:

½ cup white popcorn kernels (unpopped)
2 tablespoons coconut oil, melted
⅛ teaspoon salt
1 tablespoon white sugar
¼ teaspoon cinnamon

Directions:

Place ½ cup popcorn kernels in an air popper (or pop them however you please). While it’s popping, melt 2 tablespoons of coconut oil in a small bowl or liquid measuring cup.

Lightly drizzle the coconut oil (in a slow stream) over the popcorn as you toss the popcorn with a butter knife or spatula.

Lightly sprinkle with salt (you don’t have to measure out ⅛ teaspoon). This popcorn isn’t mean to be salty, but a little salt with the cinnamon sugar blend makes it taste so much better.

In a small bowl mix the sugar and cinnamon until well mixed. Sprinkle the cinnamon sugar mixture over the popcorn while tossing to coat evenly.

Pretzel Dogs


Let's talk hot dogs.  Pretty much all kids love them, right? Mine would probably eat them every day if I allowed it.  I loved them as a kid, too.  In fact, I recall eating them cold and straight out of the package as a snack.  Um, gross.  I know.  Hot dogs aren't generally something that call out to me these days.  I eat them when there is a fire and s'mores involved, but given a choice I  pretty much always choose a burger over a dog.  But these pretzel dogs? These are a whole different story and I need these in my life.  I think you just might, too.  


These babies have been making regular appearances at our dinner table for the last three years.  Each time I make these I am reminded of my awesome mom and the fun after-school snacks she made for us as kids.  She is adventurous in the kitchen and has never been afraid to try anything new, so we got lots of fun and delicious things to eat as a result of her experimenting.  Soft pretzels were probably my favorite on that list.  Whenever I walked the in the door and smelled them I thought she was the coolest mom ever.  I still do.  Now my kids love to help me “roll out the snakes” and make these pretzel dogs.  It is one of their favorite dinners and I feel like I cool mom when I make them.



Traditionally, soft pretzels are boiled in a baking soda bath before baking, but one day I was feeling lazy and decided I would try to skip that step to save some time and dirty dishes.  I was so happy with the results because it turned this recipe into a realistic dinner that didn’t make a huge mess or require a ton of time.  I found that if you dissolve the baking soda in super hot water and dunk each pretzel dog you still get the distinct tangy pretzel flavor without the extra hassle. Unnecessary dishes are the worst.  

I’m a mustard lover and love to dunk these in regular ol’ yellow mustard and ketchup.  The hubs is a dijon kinda guy and the kids usually go for just ketchup.  Regardless of dipping preferences, these pretzel dogs get gobbled up quickly every time I make them and some kind of battle over the leftovers is usually involved.



While we're talking hot dogs, I have to tell you that I discovered some super yummy hot dogs this week.  Usually I buy Nathan's or Hebrew National.  But I bought these on a whim and they kinda blew me away.  Park's Finest Ballpark Beef franks.  We tried the "Signature Seasoned" flavor and my hubby even commented that they were really good and well seasoned.  Huge bonus: made with 100% beef, no nitrates or nitrities, and no artificial preservatives.  This isn't an ad and I'm not getting paid to say this, I just love you and felt like you should know.

Pretzel Dogs

Ingredients:

1 ½ cups warm water
1 tablespoon sugar
1 tablespoon instant yeast
4 ½ cups All Purpose Flour, give or take a few tablespoons
2 teaspoons Salt
2 tablespoons vegetable oil
2 cups hot water
¼ cup baking soda
Coarse salt for sprinkling
12 hot dogs *see note below

Directions:



In the bowl of a mixer, add 1 1/2 cups warm water, sugar, and instant yeast. To that mixture add the oil, salt, and 3 1/2 cups of the flour. Mix on low until all the flour is incorporated. Once flour is incorporated, begin adding the remaining cup a couple of tablespoons at a time until the dough is smooth and pulls away from the sides of the bowl. It should begin to form a ball around the dough hook. Knead for about 5 minutes. You should have a fairly stiff, pliable dough--not dry. Cover with a lid and let rise at room temperature for about an hour or until doubled in size. (You can speed this up by putting your dough in a warmer spot.)

Preheat oven to 425. Line 2 baking sheets with silicone liners, foil, or parchment. If using foil or parchment, grease it or your pretzels will stick!

In a small loaf pan, combine 2 cups of hot water (as hot as it comes from the tap is fine) and baking soda. Allow it to sit and dissolve while you roll out the dough. Remove hot dogs from package and pat them dry with a paper towel. This will help the dough stick to the hot dog better. Divide dough into 12 equal portions. On a clean and lightly greased work surface, roll the dough out into a rope about 24 inches long--you may want yours longer or shorter depending on how long your hot dogs are. Tightly wrap a pretzel rope around each hot dog pinching the end to help it stay in place. I like to let the ends peek out. Dunk each hot dog in the baking soda solution and set it on a cooling rack to drip. While they are wet, sprinkle with coarse salt. Once all the hot dogs have been dunked, transfer them to the baking sheet. Bake for 12-15 minutes until they have a nice color and the hot dogs are heated all the way through. Serve immediately with ketchup and your favorite mustard for dipping.

Notes:



Most hot dogs come in packages of 8--so I usually only make 8 pretzel dogs and then make 3 or 4 plain soft pretzels with the remaining dough in this recipe.
