Chicken & Cottage Cheese Enchiladas


Have you ever heard of cottage cheese enchiladas?  We certaniliy hadn't. But the rave reviews were convincing enough to give it a shot! And boy were they delicioius.  We made a few adaptations to the original recipe - to meet our tastes. Like less cheese, etc....since there is plenty of cottage cheese.  We made a double batch and froze one.  And frozen enchiladas are always great to have on hand when dinner is seemingly impossible. Please tell me I'm not the only one that happens to!

Instant Pot Creamy Butternut & Tomato Bisque


Like many people, we are loving our Instant Pots.  This recipe is an example of one that the cook time is cut WAY down by using a pressure cooker.  Our kids eat this "tomato soup" and have no idea they are eating some nutrient-packed butternut squash.  It's a favorite of ours for a quick dinner on a cold day!

Instant Pot General Tsao's Chicken



Have you jumped on the instant pot bandwagon yet?  We aren't usually ones to want every little kitchen appliance.....but the instant pot we LOVE. We were both gifted instant pot's in the last year - and we love the fact that we can cook quicker - and get tender fall apart meat almost effortlessly!  

This General Tso’s Chicken has become a fast new favorite.  And you can probably throw it together in an Instant Pot faster than you can pick up take-out.  It’s tender, moist, flavorful, and has just a handful of ingredients–most of which are pantry staples.  You can use thawed or frozen chicken thighs here and serve it over rice or in lettuce.  Our kids loved it, too! Lemon Garlic-Herb Chicken

This chicken is the perfect go-to meal when the fridge is nearing empty and a grocery run won't happen before dinnertime.  If you're like us, chances are you'll have everything on hand to make this mouth-watering chicken.  Mix up the marinade while you defrost the chicken, let it hang out in the marinade for 30 minutes, then grill or bake it and dinner is served.  Don't forget some Rhodes Warm N Serv Rolls to Complete The Meal.  They have saved us so many times at dinner when we just need something else to round out the meal.  No rising, no waiting--they're already cooked and just need to be warmed in the oven or the microwave and they are good to go!


The regular ones are awesome, but the Artisan French Rolls are our favorites! Grab a bag on the frozen foods aisle next to the regular Rhodes rolls next time you're shopping.  They make fantastic slider buns, too!

Lemon Garlic-Herb Chicken

Ingredients:


1½ - 2 pounds boneless, skinless chicken breast halves

For the marinade:
4 tablespoon olive oil
2 tablespoon red wine vinegar
4 cloves garlic
1/2 lemon zested and juiced
1/4 teaspoon red pepper flakes
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon oregano
½ teaspoon basil

Directions:


Cut chicken breasts in half lengthwise to create thinner cutlets. In a mixing bowl or shallow container, whisk together all the marinade ingredients.  Add chicken breast cutlets to marinade and let sit at room temperature for 30 mins.  Grill for 5-8 minutes per side or until juices run clear or bake (on a lightly greased baking sheet) at 375 for 25-30 minutes, or until internal temp reaches 165. Allow to rest for 5 minutes before slicing or serving.

Lightened-up Beef Stroganoff


We love stroganoff at both of our houses! It's been a classic comfort food since we were kids!  In case you haven't had anything but the boxed version - no worries. This can be made in 20 minutes. Choose ground beef or sliced round steak - mix a few pantry staples together and wa-lah! Dinner is served.  Our kids love it too, and when there are no complaints at dinner - all is well!

Pulled Pork Pepperjack Mac


We love BBQ Pork around these parts. It's great on a bun with a drizzle of BBQ Sauce. And we seem to always have quite a bit of leftovers when we make it.  So when Leesh discovered mac and cheese with BBQ pork on top at a food truck a few summers ago - she realized this was the ultimate way to enjoy mac and cheese.  

And Mac and Cheese is even more adult friendly when it's made with Pepperjack cheese.  You can make it with whatever cheese you desire - for us it was half cheddar and half pepperjack, that way the kids and adults are both in heaven.  Catch the recipe and all the details on Or So She Says, where were sharing the recipe and printable today.
